I can't think of a day that goes by that peanut butter doesn't sound good. I'm always down for a spoonful. Recently, I've been seeing recipes for protein bites and I even sampled some at a natural grocery store in town. I was surprised by how filling just one was. As a runner, snacker and overall busy person, I like snacks that are filling and packed with nutrients. I tried my hand at this recipe with a few edits based on what I had available in my cupboards. In the process of making the bites, I'll just say I had my daily dose of protein. If you get over feeling like you're eating birdseed, these are perfect quick snacks.

1 cup dry whole grain oats
1/2 cup flax seed, whole or ground
2 tablespoons fresh ground coffee
1/2 cup creamy peanut butter
1/4 cup honey
1/4 cup maple glazed sunflower seeds

Fold everything together and chill for 25 minutes. Then, measure spoonfuls to roll into bites.
